Day @ The Zoo

We took another trip to the Zoo last week. Here's a few pictures from the visit.

Meatless Monday Apr 26





Ingredients:


16 ounces fresh broccoli, chopped
1 (16 ounce) package rotini pasta
2 cloves garlic, minced
1/2 cup olive oil
1/2 cup grated Parmesan cheese
salt to taste
ground black pepper to taste


Directions:


In a large pot, cook broccoli in boiling water until tender. Drain broccoli, but reserve cooking water.
Reusing broccoli cooking water, cook rotini pasta until al dente. Drain and remove pasta.
In a large pot, saute the garlic in the olive oil. Add the cooked pasta, broccoli, grated Parmesan cheese and toss together. If desired, add salt and pepper to taste.

Meatless Monday(last night)

HAHAHA! I forgot to post this yesterday.
Zucchini Slaw
1 tsp EVOO
2 Zucchinis(chopped)
1/4 med onion(chopped)
3 tbsp Italian salad dressing(I like Kraft)
parsley to taste
Heat EVOO in a saucepan. Cook Zucchini, and onion until tender. Mix in the dressing and parsley..cook until heated through. Served warm.
I served with a side of rice. But you could even serve this with some potatoes and meat(doesn't really work with meatless Monday though). I've heard it's also great as a topping for a hamburger.

Saturdays With Dad

Blaine, Tim and Noah built a snowman on Saturday. A very dirty one, but still a snowman. I love this picture the best, because Noah's sad face is so cute.

Tim was a big helper on Saturday, he helped Dad cut up hot dogs for the Kraft Dinner. Sounds pretty gross to me, but they love it.

I love springtime







We have been soaking up the sun for about a week now, and we've spent most of the days outside. Tim and Noah love driving their trucks around, and I've gotten tons of cleaning up done. I cannot wait until it's time to plant my garden. Last year Blaine got to do most of the work, and I got to eat all the veggies, this year is my turn.

Cupcakes, cookies and Easter eggs

Tim, his cousin Kinnon, and Blaine decorated Easter eggs, for the Easter bunny. One of my favorite things about Easter is decorating Easter eggs. Probably because I love Egg salad sandwiches, and it gives me an easy excuse to eat them for a week. And nope I don't get bored of them. Here's a picture of Tim colouring one of his eggs.


The finished product, left out for the Easter bunny. I heard she likes egg salad sandwiches too.
